Brownie & Berry Cheesecake

Make a healthier version of cheesecake using this brownie and berry cheesecake recipe. The flour is swopped out for a premix that is high in protein, gluten- and sugar-free and is Banting friendly.

This recipe uses a premix from Macro Mixes.

Brownie & Berry Cheesecake

Ingredients 

Brownie Layer

  • 1 egg

  • 1 small banana

  • 100 g Vegan Brownie Mix

  • 60 ml milk

  • 1 tbsp nut butter

Cheesecake Layer

  • 1 egg

  • 150 g plain yoghurt/cream cheese

  • 50 g berries

  • 15 g whey

  • 1 dash maple syrup

Method 

  1. Prehead the oven to 180 °C.

  2. Blend wet ingredients for brownie layer.

  3. Add brownie mix and stir.

  4. Pour the brownie mix into a greased small cake tin.

  5. For the cheesecake layer, blend all ingredients and pour the mixture on top of the brownie layer.

  6. Bake at 180 °C for 30 minutes.

  7. Let the cake cool and top it off with a blend of yoghurt and berries or icing of choice.
