Quick and easy to make, this potato salad makes a delicious addition to your braai or family lunch.
This is my all-time favourite potato salad recipe.

750 g potatoes, peeled
1 tbsp olive oil
125 g bacon, diced
3 tbsp sour cream
2 tsps Dijon mustard
1 tbsp wholegrain mustard
2 tbsp red wine vinegar
2 tbsp flat leaf parsley finely chopped
2 tbsp chives, finely chopped
Cut the potatoes into 3cm chunks and boil them until tender. Drain and set aside.
Heat the oil in frying pan over medium heat and fry the bacon until crisp.
Place the sour cream, the Dijon and wholegrain mustard, and vinegar in small bowl and stir well.
Add the dressing to the bacon in the pan, stir quickly to heat through and then pour over potatoes.
Stir the dressing through and sprinkle with herbs.
