The main ingredient in this potato salad is love.
I made this salad for a delightful langtafel evening. It was lovely sharing in the ambience of beautiful music and delightful komvandaan dishes. I remember taking a moment to appreciate these mouthwatering dishes while enjoying this canvas of beautiful, colorful dishes on my plate. It left my heart (and tummy!) full and my cup running over.

the main ingredient for this salad is lots of love
1.5 kg potatoes, peeled
1 tsp salt
1 medium onion
3 hard-boiled eggs, sliced
Ina Paarman’s Garlic & Herb Seasoning
Cross & Blackwell Mayonnaise
Parsley/mixed herbs, for garnish
Cut the potatoes in small pieces and add to a pot with the salt and boiled water and cook the potatoes until they are soft. Strain and set it aside to cool down.
Slice the onion in half lengthwise and then slice into thin half-moon rings. If you prefer you can cut the onion smaller.
Start layering your salad in a mixing bowl as follows: a third of the potatoes; cover with the garlic and herb seasoning; add a third of the onions; add a third of the egg; cover everything with the mayonnaise. Continue layering all ingredients 3 times. This avoids mashing the potatoes too much when you mix the salad.
Mix well and leave in fridge for at least 1 hour before serving.
Garnish with parsley or mixed herbs.
