Experiment with different flavours and spices in this egg-free potato salad.
Potato salad is such a winner and I often wonder why Ionly make it for braais and not for other occassions. I played around with flavours and spices and created this recipe. I used the B-well Tangy mayo as it has a sharp taste and is egg free.
Verushka Ramasami
1 kg baby potatoes, peeled
4 tbsp mayo
1 red onion, diced
spring onions, chopped
2 tsp oil
1 tsp mustard seeds
1 tsp jeera seeds
1 tsp Kashmiri masala
dhania, chopped
black pepper
Cut up the potatoes and boil them in salted water until cooked. I boiled mine for 12 minutes in the microwave.
Add the mayo to the boiled potato along with the onions and spring onions.
Heat the oil and add mustard, jeera, masala and dhania. Cook for 4 minutes.
Pour over the potato and mayo mixture and mix well.
Sprinkle extra spring onions over and enjoy.
