Family-Style Savoury Rice

Prepare this savoury rice dish for those occasions when you need a hearty vegetarian meal-in-a-pot.

I created this delicious savoury rice vegetarian dish. Perfect for those times when there is a family gathering and you want some family-style cooking.

Ingredients

  • 2 cups of long grain rice, cooked

  • 300 g soya prawns

  • 2 cups frozen mixed vegetables

  • 2 onions, sliced

  • 2 potatoes, cut into rounds, microwaved for 8min then fried

  • 150ml oil

  • 2 tsp spice for rice

  • 1 tsp ginger garlic paste

  • 1 tsp veggie seasoning

  • 2 tsp seafood masala

  • 1 tsp potato seasoning

  • 1 tsp orange pepper spice

  • 1 tsp mixed herbs

  • ½ cup water

Method

  1. Cook the rice, then drain it. Add spice for rice and mix well. Keep aside

  2. Microwave the potatoes and season.

  3. Marinate the soya prawns with the seafood masala, ginger-and-garlic paste and 1tsp oil. Mix well and leave aside.

  4. In a large, flat pot (in this case I am using my low casserole OMS pot) add oil and start by frying off the onions until golden, then drain and keep aside. Next fry the potatoes until crispy and keep aside.

  5. Lastly, fry the soya prawns until crispy and keep aside.

  6. In the remaining oil add the onions to brown, then add the mixed herbs and orange pepper spice, then add the mixed veg and water and allow to cook for 10 minutes.

  7. In batches, add in the cooked rice and top with the soya prawns, potato and fried onions. Steam for 10 minutes.

  8. Remove pot from heat and garnish with dhania and enjoy.
