This ginger, beetroot and carrot nana loaf is a healthier alternative to the traditional banana bread. The flour is swopped out for a premix that is high in protein, gluten- and sugar-free and is Banting friendly.
This recipe uses a premix from Macro Mixes.
1 packet of Nana Loaf Premix
2 eggs
½ cup milk
2 bananas ripe
100 g beetroot, shredded
100 g carrots, grated
1 tbsp fresh ginger
1 tbsp ground ginger
Preheat the oven to 180 °C.
Blend the eggs, milk and bananas.
Add the Nana premix to the wet ingredients and mix. Stir in the ginger, beetroot and carrot.
Pour the mixture into a greased loaf tin and bake for 35 minutes.
Serve with icing of your choice, or nut butter. Enjoy!
