Malfatti, an Italian dish made from ricotta and spinach, is low in carbs, and “vrek lekker”.
This dish is called malfatti, and it’s made of ricotta and spinach, some flour, semolina and an egg to bind. It’s a favourite when I want Italian food with gnocchi without fear of it looking like soup. Bonus points: it’s low in carbs and vrek lekker. I do not miss the meat at all.

500 g fresh spinach
250 g ricotta
50 g flour
50 g semolina
1 egg
70 g Parmesan
salt and pepper
1 pinch nutmeg
Wilt the spinach for a few minutes, then drain and squeeze out as much water as you can. Chop fine.
Mix everything together, including the spinach. Shape into balls, big or small or oblong, as malfatti means irregular or badly formed.
Cook in salted boiling water like you would any dumpling or pasta . They are done when they float to the surface, about 5 minutes or less.
Add immediately to homemade tomato sauce.
Grate some parmesan on top and enjoy.
