Cookies that tastes just like Eet-Sum-Mor biscuits.
Earlier this week working from home was sucking the life out of me. I seldom bake anymore, mainly because when I bake a lot, I eat a lot. But this was a small batch of biscuits (barely 20). I was supposed to roll out the dough and find cookie cutters, but if a long tine fork and hash pattern was good enough for my ouma, it’s good enough for me.
My family’s comments: it tastes like Eet-Sum-More

175 g flour
50 g custard powder
50 g icing sugar
½ ml salt
150 g butter, softened
2 ml vanilla essence
Preheat the oven to 180 °C.
Sift the flour, custard powder, icing sugar and salt into a bowl.
Rub in the butter with your fingertips.
Work the mixture together until a smooth dough is formed.
Add the vanilla essence.
Sprinkle some flour onto a clean working surface, and roll out the dough. Cut out cookie shapes with a cookie cutter.
Arrange the cookies on a greased baking tray, and bake for 15 minutes or until golden brown. Decorate with icing if you like.
