Millionaire’s Shortbread

Get creative with peanut butter and use it for this decadent treat: millionare’s shortbread.

I had a 800 g jar in excess, wondered what to do, and decided to make millionaire’s shortbread. It contains no flour and uses peanut butter, sugar, eggm condensed milk, cream, sea salt and more peanut butter. It is topped with chocolate coating.

This treat is divine if you love nuts. It tastes delicious served as dessert with vanilla ice cream, or paired with an espresso.

Millionaire’s Shortbread

Ingredients

Biscuit base

  • 2 cups peanut butter

  • 2 cups soft light brown sugar

  • 2 eggs

Caramel

  • 1 can condensed milk

  • ¾ cup peanut butter

  • ½ cup heavy cream

  • 1 tbsp soft brown sugar

  • ½ tsp sea salt flakes (I used salt grinder)

Chocolate topping

  • ⅓ cup cream

  • 150 g dark chocolate, chopped

Directions

  1. Preheat the oven to 170°C and line a baking sheet or 23 cm-diameter baking tin with parchment.

Biscuit base

  1. Mix the ingredients for the biscuit base well and smooth the mixture onto the baking sheet.

  2. Bake for 15-18 minutes. It will be soft, but it firms while cooling. Remove from the oven and let it cool down in the baking sheet or tin while making the caramel.

Caramel

  1. Place the ingredients for the caramel into a saucepan and heat on medium heat. Stir until everything has combined, and allow to simmer for 8-10 minutes until thickened, stirring continuously.

  2. Now pour over the caramel over the biscuit base and allow to cool completely before topping with the chocolate topping.

Chocolate topping

  1. Heat the cream and pour onto the dark chocolate pieces.

  2. Mix until smooth and pour over the top caramel layer.

  3. Refrigerate until set, then cut into squares.

  4. Enjoy!
