The Italian Highball is an effervescence sensation. Combining the bubbles of tonic and soda to bring to life the Lyre’s Italian Spritz as a tastier and healthier version of a spritz.
60 ml Lyre’s Italian Spritz
60 ml premium bottled mediterranean tonic water
30 ml soda water
Add all ingredients in a glass. Stir, fill with fresh cubed ice.
Serve in a highball, large or stemless wine glass and garnish with an orange slice.

45 ml Lyre’s London Dry Spirit
120 ml premium bottled tonic water
1 pink grapefruit slice
Add ingredients in highball glass, stir, fill with ice and garnish with a rosemary sprig and grapefruit slice.

¼ part (7.5 ml) white sugar syrup (1:1)
½ part (15 ml) lime juice
3 parts (90 ml) premium ginger ale
8 mint leaves
Add ingredients to a highball glass, fill with ice, stir. Garnish with a plump mint sprig and lime wedge.

75 ml Lyre’s White Cane Spirit
75 ml fresh young coconut water
20 ml white sugar syrup (1:1)
6 fresh inch pineapple chunks
Muddle or press the pineapple chunks in a shaker. Add the remaining ingredients, ice and shake hard.
Strain into a highball glass, fill with fresh cubed ice.
Garnish with a plump mint sprig and pineapple wedge.
Bourbon is usually reserved as a winter drink but the Lyre’s Blackberry Smash is one seriously fresh cocktail. This drink is riff on a Julep, and it’s loaded with fresh blackberries, fragrant mint, spicy ginger and American Malt. If you’re a whiskey lover this one’s for you.
2 Parts (60 ml) Lyre’s American Malt
½ Part (15 ml) white sugar syrup (1:1)
½ Part (15 ml) lime juice
4 blackberries
8 mint leaves
Muddle blackberries and mint with sugar syrup in a shaker. Add all ingredients and shake with ice.
Strain into an old-fashioned glass over fresh ice and garnish with plump mint sprig and blackberry on a skewer.
Coffee and tonic. Who knew? Well, it’s a thing and it’s delicious. If you want an afternoon pick me up, this is a perfect cocktail. Think Espresso Martini highball, but lighter and fresher.

4 Parts (120 ml) premium bottled tonic water
