Here’s how to make spicy mango atchar at home.
This was my first try making mango atchar and it did not come out too bad. I adapted a recipe by Salwaa Smith to my own taste.

1 kg green mangos
100 g atchar/methi masala
1 cup brown vinegar
1 tbsp fresh minced garlic
2 tsp crushed chillies
1 tsp mustard seeds
1½ cup oil
¼ cup sugar
Cut up the mangoes into small pieces (refer to picture below).
Place the mangoes in a microwavable dish and add boiling water to cover the mangoes.
Microwave for 10 minutes. Drain the water.
Now add all the ingredients except the oil to the mangoes.
Heat the oil and pour the warm oil over mangoes.
Spoon into a sterilised glass container and store in the fridge for 3 days. Stir every day in the mornings and evenings.
After 3 days transfer the atchar into smaller sterilised jars.
