Warm Millet Sosatie Salad

This delicious warm salad combines the indigenous grain millet with grilled lamb, roast grapes, curry spices and apricot.



Warm Millet Sosatie Salad (Grilled Lamb, Roast Grapes, Curry Spices And Apricot)

Preparation Time: 10 minutes

Serves 4

Ingredients

  • 8 x lamb sausages

  • 60 ml extra virgin olive oil

  • 100 g red grapes

  • 2 cups white millet

  • 1 pinch saffron

  • 1 large carrot, peeled and grated

  • 1 onion, thinly sliced

  • 1 tbsp garam masala

  • 50 g sliced almonds

  • 100 g dried apricots

  • Salt and pepper, to taste

Method

  1. Boil the millet with 4 cups of water and salt until tender to the bite. Drain excess water.

  2. Heat a pan and add olive oil. Fry the sausages until brown and cooked through.

  3. Fry the grapes in the same pan until charred.

  4. In another pan, heat and add olive oil. Fry the carrots and onion until soft, then add the garam masala. Fry for a few minutes until the spices become fragrant.

  5. Stir in the apricots and almonds and adjust seasoning.

  6. Stir in the millet.

  7. Dish onto a serving platter and serve with the grapes and sausages.
