This version of Honey Baked Chicken contains no onions, and the combination of curry and honey is simply delicious.
This recipe was always a go-to for my mom, and one of our favourites growing up. I remember the smell of the honey, curry and chicken coming from our kitchen when Mrs Wingrove dropped us off after school. To this day it is still our kids’ favourite meal and one of the reasons why I only eat chicken wings. I tweaked the recipe a bit though.
Super Easy Honey Baked Chicken
Belen Wilkinson
Note
I serve it with peas and sweetcorn and white rice.
Ingredients
1 pack chicken wings
3-4 potatoes, peeled and quartered
½ tsp turmeric
½ tsp curry powder
½ tsp leaf masala
½ tsp chicken masala
Cinnamon stick
¼ cup honey
3 tbsp oil
salt and pepper
500 ml hot water
Method
Preheat the oven to 180 °C.
Place the chicken wings and potatoes in an oven dish. Mix the rest of the ingredients in a jug and pour over the chicken and potatoes.
Bake, uncovered (to thicken the sauce and make it sticky), in the preheated oven until the chicken is done.
