A while ago I tried the TikTok pasta recipe that took social media by storm. It’s a pasta with baked tomato, basil and feta; I added sliced avocado too. Delicious!
½-1 x 500 g packet penne pasta
1 x 500 g punnet baby tomatoes, rinsed
1 large block soft feta (or 3 feta wheels)
1 x 100 g bag fresh basil, rinsed
Garlic to taste, crushed
1 chilli, chopped or 1 tbsp (15 ml) garlic and chilli paste (optional)
Mixed herbs, to taste
Salt and pepper, to taste
Lashings of olive oil
1-2 avocados, diced
Preheat the oven to 180°C. While preparing the sauce, cook the pasta according to the package instructions.
For the sauce, place the tomatoes, feta, basil, garlic, chilli, mixed herbs, salt, pepper and olive oil in an ovenproof dish. Mix very well.
Bake for about 45 minutes, until the skin of the tomatoes bursts and the feta is soft. Remove from the oven.
Mash the feta and tomatoes a little and mix again well with the other ingredients. Add the avocados and mix slightly.
Spoon in the cooked pasta, adding in a ladle or two of the pasta water if needed, until a sauce is created.
